It’s Healthy Eating Week and here at MSJ we are passionate about good food, so to celebrate this week we will be showcasing healthy recipes from a different member of staff every day at lunchtime.

A quick supper on the go from Mrs Raraty. Take 5 ingredients and it’s all ready in 30 mins!

Ingredients

  • Haddock fillet
  • 1 bulb of fennel
  • Tenderstem broccoli
  • Tomatoes on the vine
  • A jar of Kalamata olive and sun-dried tomato tapenade.

Method

STEP 1

  • Preheat the oven to 180 degrees (fan). Take a roasting tray and put the sliced fennel, tossed lightly in olive oil, in for 10 minutes.

STEP 2

  • Top the fennel with the haddock and spread tapenade over the fish. Drizzle olive oil over the broccoli and tomatoes and add to the dish.  Oven roast for 15 more minutes. Serve and enjoy!
